the baking of poffins

round two …
Abby is utterly entangled at a point in her life where she thinks it is ABSOLUTELY ESSENTIAL that everything she makes, bakes, draws, creates, or plays turns out EXACTLY like it is in the picture. Any deviation is intolerable. Lord! So exhausting for all of us! Much easier to be a laid back (lazy?) mama who looks at her slightly wonky, not quite matching, little bit burnt offerings and thinks “Ah, lovely!”
So – whilst using such situations as marvellous opportunities to reinforce the notion that although there is much in life we CANNOT control, we CAN choose how we respond – we make another batch of these funny little sweet poffins.
It was a good laugh and they taste lovely. Even if the colour is still more tie dye than immaculately smooth. Even if we did forget to add the egg this time (oops! wondered why the dough was so much drier).
And we have a date for making yet another batch on Thursday after school. Maybe then I’ll be able to share a picture of the “perfect” poffin …. :-0

I’d not heard of banana and rhubarb pie, but when I make rhubarb sauce, I like to serve it over sliced bananas.
