And then cosying up on the sofa – muma, girlie, lovely Simon, the demented dachshund and the crochet blanket – to sing along to The Sound of Music.  Okay, so I’m singing and Abby is cringing.  See – she’s twelve – of course she’s cringing now, but in a few years …

:: Hammy Cupcakes ::

We here in Bootville are working on our diet at the moment – we are cutting out the sugar, reducing the wheat, and aiming for an almost exclusively whole food diet.  So there’s been some experimentation in the kitchen.  I won’t share our wheat free, sugar free chocolate biscuits yet – they’re a bit weird and we’re only eating them with fresh strawberries beat into a few tablespoons of cream – mind you, that’s darn fine in itself :-)  But today’s lunch was a hit and we now have extras in the freezer for school and work lunches.  Here’s the recipe if you’d like to try …

:: Ingredients

2 slices of ham off the bone, chopped into narrow short strips

1 capsicum finely chopped

3/4 cup frozen corn kernels

3 eggs

1/2 cup rolled oats

1 tablespoon of whole milk plain yoghurt

butter for greasing

:: Method

* Heat oven to 200 celsius.

* Grease a 12 hole cupcake tray with butter

* Place all ingredients except eggs and yoghurt into a medium sized mixing bowl.  Stir until combined.

* Beat three eggs in a small bowl, add yoghurt and mix.

* Add egg mix to the rest of the ingredients and stir until combined.

* Dollop into greased cupcake tray and bake for 20 minutes or until egg mix is firm and tops are crispy golden.

Serves 4. Enjoy!
