wait-up cookies

Okay – they were great warm, and after waiting 12 hours I can now advise they are great cold too! And don’t need extra cinnamon. Isn’t it funny the yumminess of spices can be somehow lost in the warmth of a freshly baked goodie, yet when cold, shines?
So here’s the recipe for all those seeking a yummy, healthy, wheat free, mostly sugar free cookie. (The sweetness of the cookie comes from rapadura (evaporated cane juice) and sultanas (which are high in fructose).
Wait-up Cookies
(makes 20)
(adapted from Sally Fallon’s Raisin Nut Cookie in her book, “Nourishing Traditions”)
Ingredients:
:: 125 grams of butter
:: 125 grams of whole milk yoghurt
:: 1 1/2 cups of barley flour
:: 1/2 cup of rolled oats
:: 1/2 cup rapadura
:: 1 teaspoon of vanilla extract
:: 1 teaspoon of cinnamon
:: 1/2 cup sultanas
:: 1/2 cup chopped pecans
Method
Heat oven to 180 degrees centigrade.
In a mixer, mix the butter, yoghurt, flour and oats. When combined, add the rapadura, vanilla and cinnamon. When dough is smooth, add sultanas and pecan pieces.
Now – here’s the experimental part – talking about this with my guest and guinea pig, Emma, we think instead of adding the pecan pieces, you could leave the pecans in halves and push one half into the top of each cookie before baking. But we haven’t tried this yet – if you do this, let me know how it works!
Place a small spoonful of batter in your hand and roll gently into a ball. Place on baking sheet (baking sheets need no added greasing). These cookies will not spread so you can place them fairly close together. Either flatten the top of each cookie slightly with the back of a spoon. This is quite tricky because the batter is very sticky! Or push the pecan half into the top.
Bake at 180 for 20 minutes. Cookies will brown and smell lovely when cooked.
Let cool completely before lifting from baking tray. Store in airtight jar.
I predict, by the end of the day, there will be none left. Julian had 3 for an earlier morning coffee snack. Abby took 3 to school. Emma had 2 for breakfast and I had 1 just to make sure they were still edible.
